abv Protozyme N is a non GMO food grade neutral protease developed for the brewing industry to aid fermentation, promote yeast vitality and reduce raw material cost. It conforms to the purity specification for food grade enzymes recommended by JEFCA and the FCC.

abv Protozyme N is derived from Bacillus subtilis. It is able to hydrolyse a broad range of substrates in the mash at a neutral pH

abv Protozyme N increases the solubility of proteins in the mash, freeing them up for the yeast to utilise. This allows for vigorous fermentation and increased yeast vitality. Greater flexibility in recipes is also possible as a larger proportion of adjuncts can be used.
