abv Glucoamylase 400
Saccharification enzyme
A saccharifying glucoamylase which is derived from Aspergillus niger. Developed for the production of low carbohydrate beers. It conforms to the purity specification for food grade enzymes recommended by JEFCA and the FCC.
Cleaving both the Alpha 1-6 and 1-4 linkages of starch abv glucoamylase 400 is an exoglucosidase, liberating single units of glucose.
By allowing for maximum conversion on substrate to fermentable sugars Abv glucosamylase is a useful tool for the production of low calorie beers due to the low level of residual carbohydrates remaining in the beer after fermentation.
Abv glucoamylase has applications in the starch industry for the production of maltodextrins, glucose and high fructose syrups. It can also be used for the production of potable alcohol.
