Chill proofing Enzyme

abv Chillzyme is a non GMO protease, obtained from the plant Carica papaya. It conforms to the purity specification for food grade enzymes recommended by JEFCA and the FCC.

abv Chillzyme hydrolyses bonds between the basic amino acids, leucine and glycine. This activity reduces the ability of the soluble protein molecules to react with beer polyphenols and thus form chill haze.

Hydrolysing the high molecular soluble proteins enables the beer to have a longer shelf life. abv Chillzyme can be use in the maturation tank during storage or into bright beer tank prior to pasteurisation.
